MmmmmmmmmmMeatloaf (Whole 30)

My husband, the Grand Wizard, and I concocted this the other day, melding other recipes. 

Here’s what you need: 

1 lb ground beef 

1 lb ground pork

4 slices low sodium bacon

1 small onion

1 large bell pepper (or 5 mini ones)

3 celery stalks 

4 carrots

1 tbsp coconut aminos 

2 tsp apple cider vinegar 

Olive oil 

Toasted onions (optional, but delicious) 

Salt, pepper, garlic powder, mustard powder (1 tsp each) 
Here’s what you do:

Sauté the onion, pepper, celery, carrots and bacon (all diced) in oil. 
When softened, combine with the meat and stir up. Add the aminos, vinegar, and spices. 

Put into meatloaf pan. 

Top with toasted onions. 

***If you have W30 approved tomato sauce, paint that on top with a silicone brush before the onions. 

Bake at 400 degrees for an hour. 

Eat.
